"Nasi Kerabu Kelantan's Style"



Nasi Kerabu 

When we hear about Nasi Kerabu, we will think about Kelantan. Is it right? This is because Kelantan is synonym with Nasi Kerabu. This food not only famous in Kelantan but also in other state. In Kelantan itself, Nasi Kerabu has many different versions on how it is prepared. It depends on the place like Pasir Mas, Kota Bharu or even Tanah Merah. There are different variations of Nasi Kerabu whether its rice, side dishes  and its vegetables. 

There are several colours of rice can be prepared when making Nasi Kerabu. White rice, blue and even yellow rice. We will talk about how to do this kind of things after this. In making Nasi Kerabu, a lot of ingredients are needed. Patience is needed because this dish is quite difficult to make, but for those who are used to make it, it will become much easier. Practice make perfect. Remember that ok!

Normally, we ate this dish during special events but now it has already change. people eat this dish for breakfast and lunch also. If we buy Nasi Kerabu in stall or restaurant, the price is reasonable. It is just around five to six ringgit. Cheap right?

Just a simple Nasi Kerabu recipe that I want to share . .


Ingredients

1) For Kerabu

  • Mackerel ( grilled and flakes )
  • shallots
  • gingers
  • grated cocunut for kerisik
  • salt
  • sugar
  • white paper
2) For Sauce

  • dried chillies ( discard seeds )
  • shallots
  • asam keping
  • coconut milk 
  • lemongrass ( sliced roughly )
3) Garnish
  • cucumber, long beans, lemongrass bulb, budu ( sliced finely )
  • lemongrass ( sliced roughly )
INSTRUCTIONS

  1. To make the kerisik, toast the grated coconut under low heat on the frying pan and make sure to stir the content frequently until it turns golden brown. 
  2. Then put it aside to cool it.
  3. Shallot and ginger are blended together.
  4. Mix the blended shallot and ginger, kerisik and flaked fish in a bowl to mix well.
  5. Put the flavour. ( follow your heart ) (:
  6. In making the sauce, blended the chillies and shallot together.
  7. Take the blended spices and milk, asam keping and lemon grass into pot and boil it slowly.
  8. Stir constantly and serve in a bowl.
  9. All the garnish ingredients are sliced and put it on a big plate. 
  10. Now, it is ready to serve with white, blue or yellow rice.

  • To make blue rice, you can get juice from "bunga talang" or just buy it at shop. Then, for yellow rice you can mix your rice with a little turmeric powder.
  • you can also eat your Nasi Kerabu with fried chicken or any other side dishes.
